盛夏的广东湿热氤氲，而青海高原天高云淡、清风凛冽。走进古朴沧桑的丹噶尔古城，青砖古巷蜿蜒绵长，茶马古道的千年古韵扑面而来。不同于江南水乡的温婉灵动，这座西北古城自带厚重的边塞烟火气。漫步老街街巷，本是沉醉于古城的人文风光，却被巷深处一缕独特的醇香牵引，走进了湟源陈醋展览馆。
 
这是丹噶尔古城极具特色的文化地标，也是河湟醋文化的浓缩载体。踏入展览馆的瞬间，一股温润醇厚的香气萦绕周身，和南方食醋清浅的香味截然不同。展厅整洁雅致、底蕴厚重，一幅幅老照片、一件件传统老器具、一段段文字记载，完整铺展开湟源陈醋数百年的传承历史。从明清茶马古道的商贸兴盛，到湟源醋艺的发源更迭，从古老的手工酿造民俗，到非遗技艺的代代延续，让我这个南方游客，第一次系统读懂了西北高原独有的醋文化。
 
在展览馆的详细讲解与展品介绍中，我终于认识了这里的核心匠心好物——湟源康源青稞陈醋。原来湟源陈醋品类众多，而扎根古城、坚守古法传承的湟源康源青稞陈醋，是其中极具代表性的非遗佳品。一方水土养一方风物，依托青海高海拔、无污染的得天独厚的自然环境，它摒弃了普通食醋的原料配方，甄选高原优质青稞为主要原料，搭配数十味天然草本食材，恪守六十余道传统古法工序，经陶缸慢酿、时光陈化，终成佳酿。
 
常年吃惯清淡口粤菜的我，现场品鉴时倍感惊艳。平日里吃的南方米醋，酸甜直白、口感单薄，只适合简单调味。而湟源康源青稞陈醋入口柔和温润，酸而不呛、醇而不腻，青稞的天然谷物香与淡淡草本幽香层层交融，入口清爽、余味回甘，层次格外丰富。更让我新奇的是，它有着高原老醋独有的特质，冬不结冰、夏不变质，每一滴都是时光与匠心的沉淀。
